Lasagna is one of the best comfort foods there is! And it’s not just for the oven anymore! Make this Dutch Oven Cheesy Veggie Lasagna over the campfire while you enjoy the great outdoors at your campsite! Serve it with our Campfire Garlic Bread and you have a hearty, delicious meal right out of your campfire. Just make sure you have plenty of room to stretch out and relax for when the food coma hits!
Dutch Oven Cheesy Veggie Lasagna
4 tsp. olive oil
3 ⅓ C. pasta sauce
16 oz. oven-ready lasagna noodles
4 C. baby spinach
2 C. shredded mozzarella
2 ¼ tsp. dried oregano
2 ¼ tsp. dried basil
Parmesan cheese for serving
Allow your campfire to burn down to hot coals. A flaming, roaring campfire will deliver inconsistent heat and won’t cook your food right.Step 2:
Coat the bottom of a large Dutch oven with the olive oil.Step 3:
In a bowl, mix the sauce, oregano, and basil.Step 4:
Split all ingredients into 4 equal portions.Step 5:
Create 4 layers in the Dutch oven of sauce, pasta, spinach, and cheese.Step 6:
Place the Dutch oven on the hot coals and cover with the lid. Place enough hot coals on the top of the lid to cover it.Step 7:
Cook for around 30 minutes or until the pasta is tender and cheese is melted.
Campfire Garlic Bread
1 loaf crusty sourdough bread
¾ C. shredded mozzarella
7 Tbsp. unsalted butter, softened to room temp
¼ tsp. garlic powder
¾ tsp. salt
1 tsp. dried parsley
In a small bowl, beat the butter until smooth. Add the garlic powder, salt, and parsley and mix until well blended. Place it close enough to the fire so that it can melt.Step 2:
Cut crisscrosses through the bread, leaving about ¼” uncut at the bottom.Step 3:
Add a little bits of cheese into the cuts you just made and then drizzle the melted butter mixture on top of the cheese.Step 4:
Wrap the bread in heavy foil and place into the fire where there is low heat. Bake for around 15-20 minutes or until the cheese is melted and the bread is as crispy as you like.
Serve with a salad and beverages! Enjoy your Italian campfire dinner!
